Must Try: Twice-Fried Artichokes

We've never met an artichoke we didn't like, even though they do take a little know-how to prepare. We've talked about multiple ways to prepare them in the past, but one method that wasn't on that list? Fried — well, technically twice-fried!

Did you know that Williams-Sonoma has a blog? Well they do, it's called The Blender. It's where you'll find information and recipes coming from their test kitchens, and recently, they've been frying up artichokes. Yup, frying. Sound unusual? In this day and age, nothing is unusual, but the results are simply stunning. These fried artichokes showstoppers for sure and would be great to serve up at your next party or get together.

The idea is simple. Prep them as you would for other methods of cooking and drain and dry them after soaking. Then drop them in the oil, not once, but twice and you're ready to eat. The first time through the olive oil and canola oil mixture cooks them and the second crisps them up while leaving the insides soft and tender. Ring, ring! Hello, this is delicious calling, come on over!
